1.Mango pepper Jalapeno Arugula Summer Salad

All through summer I personally enjoy and relish a lot of salads. Out of all this is perhaps the most refreshing one to me. It contains mangoes, which is one of my favorite fruits. It contains the freshness of arugula, jalapeno peppers, onion and nuts. Quite simple yet it explodes in the mouth. The best part is it takes me less than 15 minutes to prepare! This salad is so simple that it requires a fantastic salad dressing to complement its simplicity. I add my personal favorite Basil Vinaigrette Dressing. I find it so fulfilling that I am not only eating mindfully but also tasting a good meal.
Preparation Time: 10 minutes
Servings: 4

Ingredients:
2 ripe mangoes
½ cup arugula
1 onion, diced
Nuts of your choice
2 jalapenos, sliced
1 tsp black pepper
Salt to taste

Direction:
Peel the mangoes and diced them into medium pieces.
Transfer into a bowl.
Add the arugula, diced onion, nuts and diced jalapeno.
Toss well and add the salt and pepper. Serve fresh.

Tip: I’ve used pistachio nuts in the recipe. You can use fried cashews too. If the nuts are fried it gives the salad a crunchy texture.
