Start your Day with these Super Food (Spinach + Egg)

Breakfast Style Kohlrabi Frittata

Preparation Time: 10 minutes
Cooking Time: 50 minutes
Serving: 6-8
Ingredients
1 kohlrabi, peeled
1/4 cup shredded cheese
10 eggs, beaten
2 onion, diced
½ cup mushroom, sliced
5 pieces of basil
1 large garlic clove, minced
Salt and pepper, to taste
A pinch of red pepper flakes
1/2 tablespoon extra virgin olive oil

Directions
Preheat the oven to 375 degrees F.
Heat the oil in a pan and fry the onion for 3 minutes.
Add the mushroom and toss for 2 minutes.
Whisk the eggs in a bowl and add basil, cheese, salt and pepper.
Add the kohlrabi to the pan and toss for 6 minutes.
Transfer the mixture to a baking dish.
Add the egg and cheese mixture on top.
Bake in the oven for about 25 minutes. Serve hot.
