Homemade Mayo

Mayonnaise is one of every kitchen’s staple, if the fries do not seem so tasty, adding a bit mayo with a dressing and dipping the fries in it makes it taste a whole lot better. While it works as a taste increaser, none can deny the fattening effect of it. So I came up with homemade version of mayo which is of course a whole lot healthier and make me feel better emotionally that nothing artificial is getting into my body.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Servings: 4

Ingredients:
1 egg yolk
1 tsp lemon juice
Oregano to taste
1 tsp vinegar
1 tsp mustard
Salt to taste
¼ cup mustard oil

Direction:
In a bowl whisk the egg yolk until it becomes smooth.
Add the lemon juice, oregano, vinegar, mustard and whisk well.
Add the salt and whisk again.
Finally add tiny drop of mustard oil and whisk well.
Keep whisking and adding few drops of oil and make a creamy paste.
To make a delicious mayo you need to whisk until it becomes creamy and thick in its consistency.
