Shrimp Broccoli Green beans Carrot Curry

When my husband gets tired of consuming salads everyday in the summer I always prepare this curry which incorporates all the lovely fresh summer ingredients! The softness of the shrimp, the goodness of the green beans and carrots and the fresh coriander makes this curry unforgettable. I usually serve it with quinoa or gluten free bread.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Servings: 4

Ingredients:
1 cup shrimp
¼ cup green beans
Fresh coriander
2 carrots
1 broccoli head
1 tbsp honey
1 onion
1 tomato
½ cup water
1/4 tsp salt
2 tbsp butter

Direction:
Peel the onion and dice it finely.
Dice the carrots, tomato and cut the broccoli head into medium pieces.
In a pan melt the butter and fry the onion.
Add all the vegetables and toss for 5 minutes.
Add the water and cook with the lid on for 8 minutes.
Add the shrimp and honey and toss for 5 more minutes.
Finally add the coriander and take off the heat.
Serve warm.

Tip: I like my curry a bit thick, that is why I have cooked for few more minutes than it actually requires but if you like your curry to be a bit runny then after adding the water cook only for 5 minutes.
