Zucchini halves stuffed with minced meat

Whenever I know I need to impress my husband with cooking, this is the dish I go for! Of course zucchini is the number one summer vegetable for me and it has impeccable nutrition value but despite all that this dish looks absolutely ravishing when plated up. One bite of it makes me feel emotionally charged.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Servings: 4

Ingredients:
1 cup minced beef
4 tomatoes, diced
Fresh herbs of your choice
Fresh cheese
2 onions, diced
2 zucchini
1 tbsp olive oil
1/2 tsp oregano
1 tsp honey
1/4 tsp salt

Direction:
Cut the stem of the zucchini and cut them in the middle lengthwise.
Scoop out the seeds and flesh and set aside for now.
In a pan heat the olive oil and fry the onion for a minute.
Add the minced beef and toss for nearly 5 minutes.
Add the salt, diced tomatoes, honey and oregano and toss for another 5 minutes.
Fill the middle of the zucchini using the beef mix.
Place on a greased baking tray and add some cheese on top.
Bake in the oven for 15 minutes over 350 degrees F.
Serve warm with fresh herbs on top.

Tip: I have used minced beef in the recipe, if you are vegan or vegetarian then you can try the same recipe with mushroom. The cheese can be substituted with tofu.
