Chicken pomegranate Green salad

In the scorching heat of summer I could just eat fruits all day long! It keeps me feeling light and improves my health conditions miraculously. But consuming healthy fat, vitamin K, potassium and magnesium is also necessary as the body requires all the minerals everyday to function well. So I came up with this wonderful recipe that combines all my favorite things. The crunchiness of the chicken, the freshness of the spinach and the sweetness of the pomegranate gives your taste buds a ride to the wonderland!

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Servings: 2

Ingredients:
1 chicken breast, cut into strips
1 cup pomegranate
A handful of spinach of your choice
2 tbsp almond flour
1/2 tsp ground cinnamon
Black pepper to taste
1/4 tsp salt
2 tbsp butter

Direction:
In a pan melt the butter and sear the chicken strips.
Add the almond flour, salt, pepper and toss for 8 minutes.
Transfer to a bowl and add the spinach, pomegranate and mix well.
Serve immediately.
