Main Course You Can Try During the Holidays

4. Beef with Quince Glaze and Carrots

Servings: 4-6

Ingredients

  • 24 oz-piece beef scotch fillet
  • 1 bunch baby (Dutch) carrots
  • 60ml (1/4 cup) vinegar
  • 1 tablespoon wholegrain mustard
  • 125ml (1/2 cup) Stock Beef Salt Reduced
  • Olive oil spray
  • 100g quince paste
  • 4 (21 oz) parsnips, peeled, diced
  • Steamed broccolini, to serve

Directions

  1. Grease the crockpot using olive oil cooking spray.
  2. Add the beef in the crockpot and toss until it becomes brown.
  3. Add the parsnips, and season with salt and pepper.
  4. Add the carrots, vinegar, beef stock, mustard and quince paste.
  5. Cover and cook on low heat for nearly 8 hours.
  6. Serve hot with steamed broccolini.
