Low Carb Raw Zucchini Pasta
Preparation Time: 10 minutes
Cooking Time: 20 minutes
1 red chili
1 cup water
1 tablespoon olive oil
A handful of coriander
2 garlic cloves
Salt and ground black pepper to taste
1 teaspoon sesame seeds
Peel the zucchinis and use a spiralizer to make zucchini strands.
Soak the zucchinis in water for 30 minutes. Drain and rinse well.
In a blender add the sesame seeds, red chili, garlic cloves, coriander and 1 tablespoon water.
Blend until you get a smooth paste.
In a mixing bowl add the zucchini, and season using salt and pepper.
Add the coriander pesto and mix well.
