Delicious Healthy Spaghetti Pie
Preparation Time: 10 minutes
Cooking Time: 20 minutes
1 pound ground chicken sausage
1 spaghetti squash
1/4 cup unsweetened applesauce
1 tablespoon olive oil
1 cup baby spinach leaves
1 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 cup diced red bell pepper
1 cup pizza sauce
1/2 cup onion
1/4 teaspoon ground black pepper
Preheat oven to 400 degrees F.
Dice the onion into slices. Chop the spinach leaves.
Peel the squash and cut it into half. Deseed it and arrange onto your baking sheet.
Bake for about 25 minutes.
Let it cool down completely.
In a skillet fry the onion with oil over medium heat.
Add in the sausage and stir for about 5 minutes.
Add in the garlic, pizza sauce, oregano, red bell pepper and apple sauce.
Toss for about 2 minutes and add in the spinach.
Add the sausage mixture into the squash.
Add the beaten eggs on top.
Bake again in the oven for about 1 hour.
