6 Amazing Healthy Breakfasts you can make at Home

6. Blueberry Date Pancakes

  • Preparation Time: 5 minutes
  • Cooking Time: 10 minutes
  • Servings: 6

Ingredients:

  • 1 cup coconut flour
  • 1 cup almond flour
  • 1/2 tsp ground cinnamon
  • 10 dates
  • 1 cup almond milk
  • 2 tbsp honey
  • 1/4 tsp salt
  • 2 tbsp butter
  • 2 tbsp shredded coconut, optional

Direction:

  1. Combine the coconut flour, almond flour, cinnamon, honey and salt together.
  2. If you are using shredded coconut then add then and mix well.
  3. Cut the dates in half and discard the pit. Place them on a steam basket and steam for 10 minutes.
  4. This would create a date paste. Add the date paste in the bowl.
  5. Pour in the almond milk and mix until smooth.
  6. In a nonstick pan add some butter and fry the pancakes golden brown in batches.
