4. Mayo Cucumber Beet Sandwich

  • Preparation Time: 5 minutes
  • Servings: 2

Ingredients:

  • 2 cucumbers, sliced
  • 2 beets, sliced
  • Salt and pepper to taste
  • Fresh coriander
  • 2 slices of gluten free bread
  • 4 tbsp homemade mayo (see the condiment section for the recipe)

Direction:

  1. Cut the cucumbers into thin slices.
  2. Cut the beets into thin slices.
  3. Spread the homemade mayo on top of the bread slices.
  4. Add the cucumber slices and beet slices on top.
  5. Sprinkle salt and pepper and serve fresh.
