Low Carb Healthy Muffins

Ingredients

  • 1 cup almond flour
  • 1 cupdiced onion
  • 2 green chilies, diced
  • Fresh coriander, chopped
  • 4 chicken breasts
  • 1 cupdiced red bell pepper
  • 2 tomatoes, diced
  • 1/8 tspground black pepper
  • Fresh parsley, chopped
  • Fresh cilantro, chopped
  • 1/4 tspsalt or more to taste
  • 8eggs
  • 2 tbspwater

Directions

  1. Set your oven to 350 degrees F (180 degrees C).
  2. Beat the eggs in a bowl.
  3. Add all the vegetables, chilies, spices and the herbs.
  4. Mix well and create a runny smooth batter.
  5. Use butter or cooking spray to grease muffin tray.
  6. Pour the batter in your greased muffin tray.
  7. Bake for about 15 to 20 minutes in the oven.
  8. Serve warm.
