Two Authentic Ways of Cooking Eggs

Poached Egg in Tomato Sauce

Ingredients:

  • 1 ½ cups chicken broth
  • 4 eggs
  • 3 onions, diced
  • 2 tablespoon ginger garlic paste
  • ½ teaspoon cumin
  • 2 tablespoon turmeric
  • 4 tablespoon olive oil
  • Fresh herbs
  • 6 green chillies
  • 3 red chillies
  • 2 tablespoon allspice
  • 6 tomatoes, diced
  • 2 tablespoon soy sauce
  • 2 tablespoon onion paste

Directions:

  1. In a pressure cooker fry the diced onion for 3 minutes.
  2. Add the onion paste, ginger garlic paste and toss for 5 minutes.
  3. Add the soy sauce, spices and tomatoes.
  4. Toss for 3 minutes and pour in the broth.
  5. Cook on medium high heat for 20 minutes.
  6. Crack the eggs open in the middle.
  7. Cover again with the lid.
  8. Add the chilies and herbs and cook for another 15 minutes.
  9. Serve hot with rice.
