Start your Day with these Super Food (Spinach + Egg)

Healthy Spinach and Eggs

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Servings: 2
1 tablespoon cream cheese
A handful of spinach, chopped
1 onion, sliced
1 red chili, chopped
1 cup coconut flour
A pinch of salt
2 eggs
½ cup water
Fresh coriander
A pinch of black pepper
1 tablespoon olive oil
Preheat your oven to 350 degrees F.
Grease a muffin tray using cooking spray.
In a bowl combine the coconut flour, black pepper and salt.
Beat the eggs in another bowl and add cream cheese to it.
Mix again and combine with the flour mixture.
Add in the water, coriander, red chili, onion, and spinach.
Pour the mixture into the muffin tray and bake in the oven for about 20 minutes.
Serve warm.
